OK for the astute!
Chile vs Chili
So you ask why we spell our product two ways "Chili" and "Chile". Well we are a California based company and we in California, so it's been said are different . Similarly our friends in other parts of the country are different as well. When I made my first visit to the "Chile trail" in New Mexico I was informed that before I sell "chili" peppers I should learn how to spell it correctly. OK, well, as it goes, there is a long running spicy debate as to the correct spelling of the capsicum . So Tree Huggin' Hippie Chili looked into the issue, a bit more than it should, and has come to a conclusion that will enable us to keep our credibility in both New Mexico and Texas, California is very forgiving.
The spelling "Chile" is from the Spanish Aztec name of the pod. It in some context means pure ground chile peppers. New Mexico the "Chile Capitol of the World" spells it with an "e"........ No further discussion as they say "or you will be run out of town across the border into Texas where you can then safely spell the capsicum with an i". Spelling "chili" with an "i" represents the blending of peppers and spices together to create a blend for the great dish of "Chili".
So having friends in both parts of the country, we agree with both definitions and use the "e" when we talk about specific individual pure chile peppers. Tree Huggin' Hippie Chili originated by mixing various chile peppers together with some old time chili blends and our select spices so our name ends in "i". Our products are both pure chile peppers and great chili blends so we will spell it accordingly.

Grinding already ground powders?
Rejuvenation!
In life, time takes it's toll and aging wears away the freshness of all things.
Our blends are ground and ready to use, but over time the freshness of powders can fade and may appear to lose some of their great values.
Placing the blend in a dedicated coffee grinder and regrinding it will revitalize the natural flavors.
A secret to great chili, gravy or any sauce is for it to be smooth.
Regrinding will not only jump start the flavor but will also make the blend a softer powder, enhancing the texture and appearance of your sauce.

Rice concentrate in THHC is used as an anti-caking agent to improve product flow, decrease lumps and reduce stickiness (naturally). It replaces Silicone Dioxide and other synthetics found in similar products.
Our rice concentrate is made from QAI certified organic vegetation.

What is "Natural Big Red" all about?
Currently the Tree Huggin Hippie Factory is not a "certified Organic kitchen" and we cannot label our product "Certified Organic".
When certified ingredients are mixed and packaged in a kitchen that is not certified that product cannot legally be called " certified organic".
With that clarification, "Natural Big Red Blend" utilizes certified organic
salt free chile powders and spices but cannot label it "certified organic".

"Original Blend" recipe calls for only meat and I want to add more to it?
Our Original blend is a traditional big Texas style chili blend and recipe. In Texas you don't put anything but meat in your chili. However, using our Original blend with your recipe will work just fine. But then again, that depends on what you put in your chili. Some strange ingredients have found their way into the chili pots. So heres a tip........less is better.

This is a great blend but roasting 3 pounds of green chili's is a big time consuming deal with cleaning, deseeding and destemming them. What's your recommendation as an alternative to the roasting process and keeping the great flavor this blend has?
Canned green chili's work great with this recipe. We use them most of the time. On specical occasion or in competition cook offs when we want an additional layer of fresh roasted green chili flavor we take the time to roast them. When using canned green chili's we like to buy whole green chili peppers. It enables us to check that all the skins have been removed before we cut them open and clean any seeds and stems that may be on the pepper. We dice the pepper to our preferred size of about a 1/4" and then rinse the canned liquid off. Some small quanity of canned liquid can add flavor to the pot but too much will over power the true flavor of the blend. This recipe is really pretty easy to make with canned green chili's. You can also buy diced green chili's but you will have some skins in your chili which to some is perfectly fine but to others it's not. We prefer no skins.
If you want fresh roasted flavor in your chili and want to minimize roasting time you can mix fresh roasted green chili's and canned chili's. However you decide to personalize this recipe you will love the great flavor. The magic is in our powders and your creativity will add layer upon layer of flavor into this unique dish. Have fun making this for your family and friends.
